Global food demand is exponentially increasing. To reduce pressure on the global food production market, the addition of insects to human diets has been recommended. Insects are a sustainable source of animal protein with high nutritional value and relatively low production costs. Although consuming insects seems to be a logical solution to effectively feed our growing population, many westerners are unwilling eat insects. This research explores perspectives regarding insect consumption among students at Oklahoma State University using Q Methodology. Twenty-nine students ranked a Q set of 41 statements representing a variety of opinions and beliefs about insect consumption according to the Condition of Instruction “What are your thoughts about eating insects?” Through factor analysis, interviews, and interpretation, the researcher identified two distinct perspectives toward consuming . This study provides a deeper understanding of student perceptions of insect consumption. These findings may help to identify factors to consider when introducing insect consumption into cultures where insects are not traditional food sources.
